Savoury Leftover Roast Hash with Crispy Potatoes and Herbs

Ingredients

  • 2 cups leftover roast meat (beef, pork, lamb, or chicken), chopped or shredded

  • 2 tablespoons olive oil or butter

  • 1 medium onion, diced

  • 1 red bell pepper, diced

  • 2 garlic cloves, minced

  • 3 cups cooked or parboiled potatoes, cubed

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon dried thyme

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

  • Optional: fried or poached eggs for serving

Directions

  1. Heat oil or butter in a large skillet over medium heat. Add onion and cook for 3 minutes until softened.

  2. Stir in bell pepper and garlic, cook for another 2 minutes.

  3. Add potatoes, spreading them evenly across the pan. Let cook undisturbed for 5–6 minutes to get crispy.
