Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 3/4 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/4 tsp ground ginger

  • 1 cup canned pumpkin purée (not pumpkin pie filling)

  • 2 large eggs

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar, packed

  • 1/2 cup vegetable oil (or melted coconut oil)

  • 1/4 cup milk or almond milk

  • 1 tsp vanilla extract

  • 3/4 cup semi-sweet chocolate chips (plus extra for topping, optional)

Directions

  1. Preheat to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups well.

  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.

  3. In a large bowl, whisk together pumpkin purée, eggs, granulated sugar, brown sugar, oil, milk, and vanilla extract until smooth and combined.

  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix; the batter should be thick.

  5. Gently fold in the chocolate chips.

  6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. Sprinkle a few extra chocolate chips on top for presentation, if desired.

  7. Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted into the centre of a muffin comes out clean or with a few moist crumbs.

  8. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
