Ingredients
2 large onions (yellow or sweet, cut into 1/2-inch thick rings)
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 cup cold sparkling water (or club soda)
1 large egg
1/2 cup cornstarch (for dredging)
Vegetable oil for frying
Method
Slice onions into rings and separate them carefully. Pat dry with paper towels.
In a large mixing bowl, whisk together flour, baking powder, salt, paprika, garlic powder, and pepper.
Whisk in the egg and cold sparkling water until smooth. The batter should be thick but pourable.
Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
Dredge onion rings in cornstarch, shaking off excess, then dip into the batter.
Carefully place battered rings into the hot oil, frying in small batches for 2–3 minutes until golden brown.
Remove with a slotted spoon and drain on a paper towel-lined plate.
Season with a sprinkle of salt and serve immediately.
