Small-Batch Strawberry Rhubarb Jam (No Pectin)

Ingredients

  • 2 cups chopped fresh strawberries

  • 2 cups chopped fresh rhubarb

  • 1 1/2 cups granulated sugar

  • 1 tbsp lemon juice

  • 1/2 tsp vanilla extract (optional)

  • Pinch of salt

Directions

  1. Combine strawberries, rhubarb, sugar, lemon juice, and salt in a medium saucepan. Stir well.

  2. Cook over medium heat, stirring frequently, until mixture begins to bubble and fruit releases its juices (about 5–7 minutes).

  3. Reduce heat slightly and simmer for 20–25 minutes, stirring often, until mixture thickens and reduces.

  5. Remove from heat. Stir in vanilla if using.

  6. Let cool slightly, then ladle into sterilised jars. Refrigerate for up to 3 weeks or freeze for longer storage.
