    • 1/3 cup (75g) unsalted butter, softened

    • 2 large eggs

    • 1/2 cup (120ml) milk

    • 1 teaspoon vanilla extract

    • 1 teaspoon almond extract

    • 1 1/2 teaspoons baking powder

    • 1/2 teaspoon ground cinnamon

    • 1/4 teaspoon ground ginger

    • 1/4 teaspoon salt

    Directions

    1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the base with parchment paper.

    2. In a small saucepan, melt butter with brown sugar over medium heat. Stir until smooth, then pour into prepared pan. Arrange plum slices over the top in a single layer.

    3. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.

    4. Beat in eggs, one at a time, then add vanilla and almond extracts.

    5. In a separate bowl, whisk together flour, baking powder, cinnamon, ginger, and salt.

    6. Alternate adding dry ingredients and milk to the wet mixture, mixing until just combined.

    7. Spoon batter gently over plums and smooth the top.

    8. Bake for 35–40 minutes, or until a toothpick inserted into the centre comes out clean.

    9. Let cool for 10 minutes, then invert onto a serving plate. Remove parchment and serve warm or at room temperature.
