Creamy Garlic Butter Shrimp Pasta

Ingredients

  • 8 oz fettuccine or linguine pasta

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1/2 tsp red pepper flakes (optional)

  • 1/2 cup dry white wine or chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp butter

  • Salt and black pepper, to taste

  • 2 tbsp chopped parsley

  • Juice of 1/2 lemon

Directions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

  2. Pat shrimp dry and season with salt and pepper.

  3. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook 1–2 minutes per side, until pink and opaque. Remove and set aside.

  4. In the same skillet, lower heat and add butter, garlic, and red pepper flakes. Cook until fragrant, about 1 minute.

  5. Pour in wine or broth, scraping up browned bits. Simmer for 2 minutes.

  6. Stir in cream and bring to a gentle simmer. Add Parmesan, whisking until smooth.

  7. Toss in drained pasta and shrimp. Add reserved pasta water a little at a time to loosen the sauce, if needed.

  8. Season with salt, pepper, lemon juice, and chopped parsley.

  9. Serve immediately with extra Parmesan on top.
