  • 1 1/4 cups heavy cream, divided

Directions

  1. Melt chocolate in a heatproof bowl set over a pan of simmering water (double boiler method). Stir until smooth and let cool slightly.

  3. In another bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add sugar and whisk to stiff peaks.

  4. In a separate bowl, whip 1 cup of the heavy cream to soft peaks.

  5. Gently fold whipped cream into the chocolate mixture, followed by egg whites, folding carefully to keep the mousse airy.
