Ingredients

  • 1 lb chicken breast, cooked and shredded

  • 12 corn tortillas

  • 2 cups salsa verde

  • 1 cup sour cream

  • 1 cup shredded Monterey Jack cheese

  • 1 cup shredded cheddar cheese

  • 1/2 cup chopped onion

  • 1/4 cup chopped fresh cilantro

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1/2 teaspoon ground cumin

  • Salt and pepper to taste

  • Lime wedges, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.

  3. Add the shredded chicken, ground cumin, salt, and pepper. Cook for another 2-3 minutes, stirring occasionally.

  4. Pour the custard mixture into the prepared pie crust.

  5. Stir in 1/2 cup of salsa verde and remove from heat.

  6. In a medium bowl, mix the remaining salsa verde with the sour cream.

  7. Lightly coat a baking dish with cooking spray. Spread a thin layer of the salsa verde and sour cream mixture on the bottom.

  8. Warm the tortillas in a dry skillet or microwave to make them pliable.

  9. Spoon the chicken mixture evenly onto each tortilla, roll them up, and place them seam-side down in the baking dish.

  10. Pour the remaining salsa verde and sour cream mixture over the top of the enchiladas, spreading it evenly.

  11. Sprinkle the shredded Monterey Jack and cheddar cheese over the top.

  12. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

  13. Garnish with chopped cilantro and serve with lime wedges.
