This recipe is essentially comfort in a casserole dish. Thinly sliced potatoes and leftover gammon are layered with a velvety Dijon-spiked cheese sauce, baked until bubbly and golden on top. Creamy Leftover Gammon and Potato Bake with Dijon Mustard and Cheese

Ingredients

  • 2 cups cooked gammon, diced

  • 3 medium potatoes, thinly sliced

  • 1 small onion, thinly sliced

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 1/2 cups whole milk

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon garlic powder

  • Salt and black pepper, to taste

  • 1 1/2 cups shredded cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 1 tablespoon fresh parsley, chopped (for garnish)

Directions

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish with butter or non-stick spray.

  2. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to form a roux.

  3. Gradually whisk in milk until smooth. Add Dijon mustard, garlic powder, salt, and pepper. Simmer for 5–6 minutes until thickened.

  4. Stir in 1 cup of the shredded cheddar cheese until melted and smooth.

  5. Layer half the sliced potatoes in the bottom of the baking dish. Top with half the onions and half the diced gammon.

  6. Pour over half the cheese sauce. Repeat with remaining potatoes, onions, gammon, and cheese sauce.

  7. Sprinkle the top with the remaining 1/2 cup of cheddar and all the Parmesan.

  8. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15–20 minutes until golden and bubbling.

  9. Let rest for 10 minutes before serving. Garnish with chopped parsley.
