  • 1 lb sausage meat (pork or pork & herb)

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 1 tablespoon fresh parsley, chopped

  • 1/2 teaspoon dried thyme

  • 3 cups stale bread, cubed

  • 2 eggs, lightly beaten

  • 1/2 cup chicken or vegetable stock

  • Salt and freshly ground pepper, to taste

  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish.

  2. Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft. Add garlic and cook for 1 more minute.

  3. Add sausage meat to the pan, breaking it up with a spoon. Cook until browned and cooked through, about 7–8 minutes.

  4. Remove from heat and stir in chopped sage, parsley, thyme, salt, and pepper.

  5. In a large bowl, combine bread cubes, cooked sausage mixture, beaten eggs, and stock. Toss gently until everything is moistened.
